  1. Wash and thoroughly dry zucchini, cut ends, and slice into ½-inch thick rounds or spears.
  2. In the first bowl, combine flour, salt, pepper, and garlic powder. In the second bowl, whisk eggs. In the third bowl, mix panko breadcrumbs and optional parmesan.
  3. Dredge zucchini in flour mixture, dip in egg wash, and coat with panko breading.
