- In a mixing bowl, combine peanut butter, sweetened condensed milk, soy sauce, and water. Stir until smooth. Set aside.
- Flatten chicken thighs between plastic wrap using a meat mallet to about ½-inch thick.
- In a shallow dish, whisk together eggs, flour, a pinch of salt, and additional peanut butter until smooth.
- Dredge each piece of chicken in the egg wash, then coat with panko breadcrumbs, pressing down gently.
- Heat vegetable oil in a Dutch oven to 350°F. Fry chicken pieces for 2-3 minutes per side until golden brown.
- Drain fried chicken on a wire rack and slice into bite-sized pieces. Drizzle with peanut sauce and serve immediately.
