Step-by-Step Instructions
  1. Combine 1 cup flour, 1/4 cup cornstarch, 1/2 teaspoon baking powder, and 2 tablespoons Cajun seasoning in a mixing bowl. In another bowl, whisk together 1 cup buttermilk and 1 egg until smooth.
  2. Dredge each cubed steak in the flour mixture, dip into the buttermilk mixture, then return to the flour mix, pressing down gently.
  3. In a large skillet, pour enough vegetable oil to reach about 1/4 inch deep. Heat the oil over medium until it shimmers.
  4. Carefully place the breaded steaks in the hot oil and fry for about 2 to 3 minutes per side or until golden brown.
  5. Remove the steaks and drain on a wire rack. For gravy, drain the skillet, leave 3 tablespoons oil, and add 1/4 cup flour. Stir continuously over medium heat for 3-5 minutes.
  6. Gradually whisk in 2 cups of milk, bring to a simmer while stirring until thickened. Season with salt and pepper.
