Step-by-Step Instructions
- Combine 1 cup flour, 1/4 cup cornstarch, 1/2 teaspoon baking powder, and 2 tablespoons Cajun seasoning in a mixing bowl. In another bowl, whisk together 1 cup buttermilk and 1 egg until smooth.
- Dredge each cubed steak in the flour mixture, dip into the buttermilk mixture, then return to the flour mix, pressing down gently.
- In a large skillet, pour enough vegetable oil to reach about 1/4 inch deep. Heat the oil over medium until it shimmers.
- Carefully place the breaded steaks in the hot oil and fry for about 2 to 3 minutes per side or until golden brown.
- Remove the steaks and drain on a wire rack. For gravy, drain the skillet, leave 3 tablespoons oil, and add 1/4 cup flour. Stir continuously over medium heat for 3-5 minutes.
- Gradually whisk in 2 cups of milk, bring to a simmer while stirring until thickened. Season with salt and pepper.
- Plate the crispy chicken fried steak and top with gravy, serve over mashed potatoes or rice.

Notes
Ensure oil is hot before frying for crispy results. Leftover browned bits can enhance flavor in gravy.
