  • 2 medium ripe avocados Ensure they are ripe
  • 1/4 cup finely chopped red onion Substitute with green onions if desired
  • 2 tablespoons fresh lime juice Adjust to taste
  • 2 tablespoons extra virgin olive oil Adjust based on preference

Method
 

Preparation Steps
  1. Rinse the cucumbers and avocados under cold water. Dice cucumbers into bite-sized pieces and scoop out the avocado flesh. Place in a large mixing bowl.
  2. Add finely chopped red onion to the bowl and gently fold together with a spatula.
  3. In a small bowl, whisk together fresh lime juice, extra virgin olive oil, salt, and pepper until well combined.
  4. Drizzle the lime dressing over the salad mixture and gently toss to coat.
