- Preheat your oven to 350°F (175°C). Place a large oven-safe skillet on the stovetop.
- Melt the butter in the skillet over medium heat. Add the grated zucchini, grated onion, minced garlic, Italian seasoning, salt, and pepper. Sauté for 4-5 minutes.
- Remove the skillet from heat and stir in the mayonnaise, Panko breadcrumbs, and cheddar cheese until well blended.
- Spread the zucchini mixture back into the skillet and sprinkle remaining Panko breadcrumbs and Parmesan cheese on top.
- Place the skillet in the preheated oven and bake for 20-25 minutes until golden and bubbly.
- Remove from the oven and let rest for 5 minutes before serving.
