- Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium-high heat. Once hot, add 1 chopped onion and sauté for about 5 minutes until soft and translucent. Stir in 2 cloves of minced garlic and cook for an additional minute.
- Pour in 1 cup of passata, add 1 teaspoon of Italian seasoning, and season with salt and pepper. Bring to a gentle simmer and allow to thicken for approximately 10 minutes.
- In a separate pot, bring salted water to a boil. Add 8 ounces of rigatoni pasta and cook according to package instructions, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
- Once the sauce has simmered, reduce heat to low. Stir in 1/2 cup of grated Parmesan cheese and fresh chopped basil until the cheese melts into the sauce.
- Gently fold in 1 cup of ricotta cheese, stirring until incorporated. If too thick, add reserved pasta water gradually.
- Add the drained rigatoni to the skillet, tossing to coat with the sauce. Heat through for another minute or two, adding more pasta water if needed.
- Plate the Tomato Ricotta Pasta hot, garnishing with additional grated Parmesan cheese and fresh basil leaves.
