  • 2 whole English Cucumbers Crispness and hydration are key
  • 1 cup Sweet Corn Fresh or canned
  • 1 cup Rotisserie Chicken Optional; can substitute with chickpeas
  • 1/4 cup Cilantro
  • 1/4 cup Green Onions
  • 1 whole Jalapeño Optional, adjust to taste
  • 1/4 cup Red Onion
  • 1 whole Red Bell Pepper
For the Creamy Dressing
  • 1 cup Plain Greek Yogurt Or substitute with sour cream
  • 1/2 cup Mayonnaise Use light mayo for lower calories
  • 2 tablespoons Lime Freshly squeezed is ideal
  • 2 cloves Garlic Minced
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • to taste Salt & Pepper Use freshly cracked pepper for better aroma

Method
 

Preparation Steps
  1. Wash English cucumbers thoroughly. Slice thinly and blot with paper towels to absorb excess moisture. Let rest for 10 minutes.
  2. In a medium bowl, combine Greek yogurt, mayonnaise, lime juice, minced garlic, chili powder, paprika, cumin, salt, and pepper. Whisk until smooth.
  3. In a large mixing bowl, combine cucumbers, sweet corn, and rotisserie chicken (or chickpeas). Add chopped cilantro, green onions, and other veggies.
  4. Pour the dressing over the salad ingredients and gently mix until coated without breaking the cucumbers.
  5. Transfer to a colorful serving bowl, cover, and refrigerate for 10-15 minutes before serving.
