Preparation Steps
- Wash English cucumbers thoroughly. Slice thinly and blot with paper towels to absorb excess moisture. Let rest for 10 minutes.
- In a medium bowl, combine Greek yogurt, mayonnaise, lime juice, minced garlic, chili powder, paprika, cumin, salt, and pepper. Whisk until smooth.
- In a large mixing bowl, combine cucumbers, sweet corn, and rotisserie chicken (or chickpeas). Add chopped cilantro, green onions, and other veggies.
- Pour the dressing over the salad ingredients and gently mix until coated without breaking the cucumbers.
- Transfer to a colorful serving bowl, cover, and refrigerate for 10-15 minutes before serving.

Best enjoyed cold or at room temperature. Store leftovers in an airtight container for up to 3 days. Freezing is not recommended as cucumbers lose texture.
