Step-by-Step Instructions
  1. Brown the Beef: In a large pot over medium heat, add the ground beef, breaking it apart with a wooden spoon. Cook for 5-7 minutes until it’s browned. Drain excess fat and set aside.
  2. Sauté the Vegetables: In the same pot, melt 2 tablespoons of butter over medium heat. Add diced onion, celery, and carrots, sautéing for about 6 minutes until tender.
  3. Add Garlic and Thyme: Stir in minced garlic and dried thyme for an additional minute until fragrant.
  4. Incorporate the Flour: Sprinkle flour over vegetables and stir for 1-2 minutes to cook out the raw flour taste.
  5. Whisk in the Broth: Gradually pour in beef broth while whisking to avoid lumps, then bring to a simmer for about 5 minutes.
  6. Add Cream and Beef: Stir in heavy cream and return cooked beef to the pot, simmer on low for about 10 minutes.
  7. Stir in the Peas: Add frozen peas and cook for about 3 minutes until heated through.
  8. Season the Soup: Taste and season with salt and pepper to suit your palate, stirring well.
  9. Serve with Mashed Potatoes: Ladle soup into bowls and top with warm mashed potatoes.
