Step-by-Step Instructions
  1. Season the chicken breasts with salt, pepper, cumin, and nutmeg and place in the bottom of the crockpot.
  2. Dice the onion and mince the garlic, adding them on top of the chicken along with chopped carrots and celery.
  3. Add the pumpkin puree over the layered vegetables.
  4. Pour the chicken broth over the mixture.
  5. Sprinkle salt, pepper, cinnamon, and other spices on top and gently stir.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  7. Remove chicken and shred it, then return it to the pot.
  8. Stir in heavy cream and cream cheese until fully incorporated; let it simmer for 10-15 minutes.
  9. Ladle into bowls and garnish with parsley or cilantro.
