Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil or butter over medium heat. Add 2 minced garlic cloves and sauté for about 1-2 minutes until fragrant.
  2. Stir in 1 cup of orzo pasta and toast for 1-2 minutes until slightly golden.
  3. Pour in 4 cups of vegetable broth and bring the mixture to a gentle simmer, cooking for about 5 minutes.
  4. Stir in 2 cups of chopped broccoli florets and cover the skillet, cooking for an additional 5-7 minutes.
  5. Reduce heat to low, adding 1 cup of milk, 1 cup of shredded cheddar cheese, and ½ cup of grated Parmesan cheese. Season with salt and pepper.
