- Preheat a large skillet over medium heat for about 2-3 minutes. Add olive oil to coat the bottom of the skillet.
- Sear the seasoned chicken cutlets in the hot skillet for about 5 minutes until golden-brown, then flip and cook for an additional 3 minutes. Remove and set aside.
- In the same skillet, add diced yellow onion and sauté for 2 minutes until soft and translucent.
- Add sliced baby Bella mushrooms and minced garlic, sauté for around 5 minutes until tender.
- Whisk together chicken broth and all-purpose flour until smooth. Pour into the skillet along with half and half and dried thyme. Cook for 2-3 minutes, stirring, until thickened.
- Return the seared chicken cutlets to the skillet and simmer for another 2-3 minutes until heated through.
- Remove from heat and garnish with fresh herbs. Serve warm and enjoy!
