- Remove the tofu from its packaging and press it to eliminate excess moisture for about 30 minutes.
- In a medium mixing bowl, combine vegan mayo, Dijon mustard, ground turmeric, and nutritional yeast. Whisk together until well incorporated.
- Crumble the pressed tofu into the mayo mixture, folding in the finely chopped chives.
- Spread an even layer of the tofu filling across each slice of bread. Optionally, add cress before placing another slice on top.
- Cut the assembled sandwiches into triangles or preferred shapes for serving.
