  • 1/2 cup Vegan mayo Feel free to substitute with homemade vegan mayo.
  • 1 tablespoon Dijon mustard Swap for yellow mustard for milder flavor.
  • 1/4 teaspoon Ground turmeric Optional for color and flavor.
  • 2 tablespoons Nutritional yeast Can be omitted or replaced with vegan cheese.
  • 2 tablespoons Chives Finely chopped, or substitute with other herbs.
For the Sandwich
  • 8 slices Bread Use large white, wholemeal, or gluten-free.
  • 1 handful Cress Optional garnish for a fresh crunch.

Method
 

Step-by-Step Instructions
  1. Remove the tofu from its packaging and press it to eliminate excess moisture for about 30 minutes.
  2. In a medium mixing bowl, combine vegan mayo, Dijon mustard, ground turmeric, and nutritional yeast. Whisk together until well incorporated.
  3. Crumble the pressed tofu into the mayo mixture, folding in the finely chopped chives.
  4. Spread an even layer of the tofu filling across each slice of bread. Optionally, add cress before placing another slice on top.
  5. Cut the assembled sandwiches into triangles or preferred shapes for serving.
