  • 1/2 cup Sour Cream Greek yogurt can substitute
For Garnishing
  • 4 strips Bacon, cooked and crumbled Omit for vegetarian option
  • 2 tablespoons Green Onions, chopped For garnish

Step-by-Step Instructions
  1. In your crockpot, mix together the peeled and cubed potatoes, chicken broth, cooked bacon, finely chopped onion, and minced garlic. Season with salt and freshly ground black pepper to taste. Stir the ingredients well.
  2. Cover the crockpot and set your cooker to high for 3-4 hours or low for 5-6 hours until the potatoes are fork-tender.
  3. Once the potatoes are fork-tender, use a fork or an immersion blender to lightly mash them in the crockpot.
  4. Stir in the unsalted butter, all-purpose flour, whole milk, shredded cheddar cheese, and sour cream. Mix until well combined and cook on low for an additional 30-60 minutes.
  5. Ladle into bowls and garnish with freshly chopped green onions and additional toppings if desired. Serve hot.
