Ingredients

  • 1 pound Boneless, Skinless Chicken Breasts Cut into bite-sized pieces
  • 8 ounces Bowtie Pasta (Farfalle) Can substitute with gluten-free pasta
  • 2 cups Broccoli Florets Or substitute with bell peppers or zucchini
For Flavoring
  • 1 tablespoon Cajun Seasoning Adjust to taste
  • 1 teaspoon Garlic Powder Fresh garlic adds extra flavor
  • 1 teaspoon Smoked Paprika
  • to taste Salt
  • to taste Black Pepper
  • optional Crushed Red Pepper Flakes For heat
For the Sauce
  • 2 tablespoons Dijon Mustard
  • 1 each Lemon (Juice and Zest) Use fresh for best flavor
  • 2 tablespoons Fresh Parsley Chopped
  • 2 tablespoons Chives Chopped
  • 2 tablespoons Olive Oil For sautéing the chicken
  • 4 tablespoons Unsalted Butter Can reduce for a lighter version
  • 1/2 cup Grated Parmesan Cheese Add more for richer sauce

Method
 

Directions
  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente, about 10-12 minutes. In the last 3 minutes, add the broccoli. Reserve 1/2 cup pasta water before draining.
  2. Season the Chicken: Cut chicken into bite-sized pieces and coat with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes until golden and cooked through (165°F). Remove and set aside.
  4. Make the Sauce: In the same skillet, add butter and melt. Stir in garlic powder, red pepper flakes, Dijon mustard, lemon juice, lemon zest, parsley, chives, and adjust seasoning.
  5. Combine Everything: Return pasta, broccoli, and chicken to the skillet. Toss with sauce and reserved pasta water to reach desired consistency. Stir in Parmesan cheese.
  6. Serve the Dish: Plate warm, garnishing with additional Parmesan, parsley, and a squeeze of lemon juice.
