  1. Begin by gathering your blender or food processor. Combine the frozen mango, thick coconut cream, almond milk, honey, freshly squeezed lime juice, and vanilla extract in the blender. Blend on high for about 1–2 minutes or until the mixture is completely smooth and creamy.
  2. Once the mixture is smooth, carefully pour it into popsicle molds, filling them about 3/4 full. Insert popsicle sticks and place the molds in the freezer for at least 6 hours or until solid.
  3. After freezing, run warm water over the molds for about 30 seconds. Gently pull on the sticks to remove the popsicles.
  4. Optionally, run the popsicles under cold water again and sprinkle shredded coconut over the tops for garnish. Place them back in the freezer for an additional 15–20 minutes to set the garnish.
