Step-by-Step Instructions
  1. Combine the base ingredients in a bowl or jar: mix together rolled oats, almond milk, chia seeds, and vanilla protein powder along with cinnamon, nutmeg, shredded carrots, chopped pecans, and raisins.
  2. Cover the bowl or jar tightly and refrigerate for at least 1 hour or preferably overnight to allow the flavors to meld.
  3. In a microwave-safe bowl, melt white chocolate chips in 20-second intervals, stirring in between. Once melted, mix in Greek yogurt and softened cream cheese until smooth.
  4. Pour the cheesecake ganache over the chilled oat mixture and spread evenly. Refrigerate for at least 30 minutes to set.
