- In a large pot, heat over medium heat. Add the ground beef, breaking it apart with a wooden spoon as it cooks. Sauté for about 5–7 minutes until the meat is no longer pink and starting to brown. Drain any excess fat.
- Add the chopped onions, minced garlic, diced carrots, and celery to the pot. Sauté for 5 minutes, stirring occasionally, until the onions are translucent and the vegetables start to soften.
- Stir in the diced tomatoes, chopped potatoes, corn, and Italian seasoning. Season with salt and pepper to taste. Give everything a good stir to combine all the ingredients.
- Pour in the beef broth, mixing thoroughly. Bring the soup to a rolling boil over high heat.
- Once boiling, reduce the heat to low and cover the pot. Let the Hamburger Soup simmer for 25–30 minutes, stirring occasionally until the vegetables are tender.
- Before serving, taste the soup and adjust seasoning. Ladle the Hamburger Soup into bowls, garnishing with fresh parsley.
