  • 1 lb Ground Turkey can substitute with chicken or pork
  • 1 cup Canned Pumpkin Puree use pure pumpkin, not pie filling
  • 1 cup Breadcrumbs whole wheat or panko preferred
  • 1/2 cup Parmesan Cheese use nutritional yeast for dairy-free
  • 1 large Egg beaten, can substitute with extra tablespoon of pumpkin for egg-free
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced or garlic powder as an alternative
  • 1/4 cup Fresh Sage dried sage can be used, alters flavor
  • to taste Salt & Pepper adjust according to preference
  • 1/4 tsp Ground Nutmeg can swap with allspice
  • 1/4 tsp Red Pepper Flakes optional for heat
  • 2 tbsp Olive Oil for cooking, any oil can be used

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground turkey, pumpkin puree, breadcrumbs, Parmesan cheese, beaten egg, chopped onion, minced garlic, sage, salt, pepper, nutmeg, and red pepper flakes. Mix gently until just combined.
  3. Shape the mixture into balls about 1 to 1.5 inches in diameter and place them on the prepared baking sheet.
  4. Heat a skillet over medium-high heat and add olive oil. Sear the meatballs for about 3-4 minutes per side until golden brown.
  5. Transfer the meatballs to the baking sheet and bake for 15-20 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let the meatballs rest for a few minutes before serving, garnished with sage or Parmesan if desired.
