Method
 

Chai Preparation
  1. Prepare the Spice Mix: In a small bowl, combine the ground cinnamon, cloves, ginger, cardamom, nutmeg, and black pepper. Reserve 1/4 teaspoon of this mix for the whipped cream.
  2. Brew the Chai Base: In a medium saucepan, pour in 1 cup of water and place it over medium heat. Add the black tea, brown sugar, and spice mix. Bring to a gentle simmer for about 3-4 minutes.
  3. Add the Milk: Lower the heat and pour in 2 cups of milk or plant-based alternative, stirring to combine. Allow to steep on low heat for another 5 minutes.
  4. Strain the Chai: Remove from heat and strain into mugs, ensuring the tea leaves and spices are left behind.
  5. Whip the Cream: In a mixing bowl, combine heavy cream, honey, and reserved spice mix. Whip until soft peaks form, about 2-3 minutes.
