Preparation Steps
- Coat a 6-quart crockpot with nonstick cooking spray.

- In a skillet, add olive oil and let it heat. Sauté carrots and onions for 4-5 minutes. Stir in garlic for another 20 seconds.

- Transfer sautéed vegetables to the crockpot, add lentils and broth, then kielbasa. Mix well.

- Cover and cook on low for approximately 5.5 hours or simmer on stovetop for 35-40 minutes until lentils are tender.

- Stir in Italian herbs and lemon juice, and adjust seasoning to taste before serving.

- Ladle into bowls and serve warm, preferably with crusty bread.
