  1. Pat the boneless chuck roast dry with paper towels and season both sides with fine sea salt and ground black pepper. Let sit at room temperature.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the seasoned roast for 5-7 minutes on each side until golden brown, then set aside.
  3. Caramelize the sliced yellow onions in the same pot, cooking for 5 minutes over medium heat, then reduce heat and cook for 20-25 minutes until golden and sweet.
  4. Add minced garlic and maple syrup to the onions and cook for 7-8 minutes. Sprinkle in flour and mix well before adding red wine.
  5. Combine beef stock, rosemary, and bay leaf, then return the seared roast to the pot. Cover and bake at 300°F for approximately 3 hours.
