Step-by-Step Instructions
  1. Melt butter in a large pot over medium heat. Add the onions and celery, sauté for 4-5 minutes until softened.
  2. Stir in peas and carrots, cooking for 2-3 minutes, then add garlic and cook for 1 minute.
  3. Add orzo and 2 tablespoons of butter, toast for 2-3 minutes until lightly golden.
  4. Pour in chicken broth to cover orzo, simmer on low heat for 10-12 minutes until orzo is tender.
  5. Gently stir in shredded chicken and heavy cream, heat through for 3-4 minutes until creamy.
  6. Remove from heat, stir in Parmesan, salt, pepper, thyme, and red pepper flakes. Adjust seasoning as needed.
