Preparing the Oats
- In a medium bowl, blend together rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir vigorously for about 1-2 minutes until the mixture is well combined and creamy.
- If you're opting for extra sweetness and a delightful texture, gently fold sliced bananas into your oats mixture.
- Transfer the oat mixture evenly into two sealed jars or airtight containers.
- Place the jars in the refrigerator and let them soak for a minimum of 4 hours, preferably overnight.
- When ready to enjoy, give the oats a good stir to blend everything back together. Top with fresh whipped cream and additional shredded coconut, if desired.
