Method
 

Preparing the Oats
  1. In a medium bowl, blend together rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir vigorously for about 1-2 minutes until the mixture is well combined and creamy.
  2. If you're opting for extra sweetness and a delightful texture, gently fold sliced bananas into your oats mixture.
  3. Transfer the oat mixture evenly into two sealed jars or airtight containers.
  4. Place the jars in the refrigerator and let them soak for a minimum of 4 hours, preferably overnight.
  5. When ready to enjoy, give the oats a good stir to blend everything back together. Top with fresh whipped cream and additional shredded coconut, if desired.
