Ingredients
  

For the Salad
  • 1 head Romaine Lettuce substitute with green leaf or butter lettuce for variety
  • 1 cup Shredded Carrots use pre-packaged for convenience
  • 1 cup Cherry Tomatoes halved
  • 1 medium Cucumber peeling is optional
  • 1/4 medium Red Onion thinly sliced
  • Pumpkin Seeds or Croutons optional toppings
For the Honey Lime Dressing
  • 1/4 cup Honey maple syrup as a vegan substitute
  • 2 tablespoons Lime Juice fresh juice is best
  • 1/4 cup Olive Oil extra virgin recommended
  • to taste teaspoons Salt
  • to taste teaspoons Pepper

Method
 

Steps
  1. Begin by rinsing one head of romaine lettuce under cold water to remove any dirt. Pat it dry, chop into bite-sized pieces, and place in a large salad bowl.
  2. Add shredded carrots, halved cherry tomatoes, and sliced cucumber. Optionally peel cucumber for texture. Thinly slice a quarter of a red onion and sprinkle on top.
  3. Gently toss all the ingredients together using tongs or your hands, ensuring even distribution.
  4. Drizzle honey lime vinaigrette over the salad, starting with about a quarter cup, and toss again to coat evenly.
  5. Serve immediately or store components separately until just before serving.
