- Preheat your oven to 375°F (190°C). Lightly oil a 9-inch loaf pan and line it with parchment paper.
- Sauté diced onions, minced garlic, and optional finely chopped carrots in a skillet over medium heat for about 5-7 minutes until translucent.
- In a food processor, combine drained chickpeas, sautéed vegetables, breadcrumbs, egg (or flax egg), ketchup, and seasonings. Pulse for 10-15 seconds until roughly combined.
- Taste the mixture and adjust seasoning as needed. Firmly press the mixture into the prepared loaf pan.
- Bake for 30 minutes, then spread additional ketchup on top and bake for another 20-25 minutes until firm.
