Step-by-Step Instructions for Chickpea Meatloaf
  1. Preheat your oven to 375°F (190°C). Lightly oil a 9-inch loaf pan and line it with parchment paper.
  2. Sauté diced onions, minced garlic, and optional finely chopped carrots in a skillet over medium heat for about 5-7 minutes until translucent.
  3. In a food processor, combine drained chickpeas, sautéed vegetables, breadcrumbs, egg (or flax egg), ketchup, and seasonings. Pulse for 10-15 seconds until roughly combined.
  4. Taste the mixture and adjust seasoning as needed. Firmly press the mixture into the prepared loaf pan.
  5. Bake for 30 minutes, then spread additional ketchup on top and bake for another 20-25 minutes until firm.
  6. Remove from the oven and let rest for 10-20 minutes before slicing.
