  • 2 cups Coarse Salt
For the Escovitch Veggies
  • 1 cup Bell Peppers mixed colors
  • 1 each Aromatics (Garlic, Onion) fresh
  • 1/2 cup Vinegar
Spices
  • 1 teaspoon Thyme
  • 1 teaspoon Allspice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Rinse your firm fish under cold water and pat it dry. Rub a layer of coarse salt over the entire fish.
  3. Place the fish on a baking sheet lined with parchment paper and encase it in salt.
  4. Bake the fish for about 25 to 30 minutes, until the crust is golden.
  5. While the fish is baking, heat oil in a skillet and sauté bell peppers and onions for 5 to 7 minutes.
  6. Add vinegar, thyme, and allspice to the veggies and stir.
  7. Remove the fish from the oven, lift off the salt crust, and serve with the Escovitch veggies.
