  • 1/2 teaspoon dried basil or minced fresh basil
  • 1/2 teaspoon salt

Equipment

  • Large skillet

Method

Step-by-Step Instructions for Cheesy Zucchini Sauté
  1. In a large skillet, melt ¼ cup of cubed butter over medium heat. Once the butter is bubbling and fragrant, add ½ cup of chopped onion. Sauté the onion for 2-3 minutes until it becomes soft and translucent, stirring occasionally.
  2. Stir in 3 cups of coarsely shredded zucchini along with ½ teaspoon of salt, ¹/₈ teaspoon garlic powder, and minced fresh basil (or ½ teaspoon dried basil). Continue to cook, stirring frequently, for 4-5 minutes until the zucchini is crisp-tender and just starting to wilt.
  3. Sprinkle 1 cup of shredded cheddar cheese over the sautéed zucchini mixture, followed by 1 cup of diced fresh tomatoes and 2 tablespoons of sliced olives. Gently fold the ingredients together to evenly distribute the cheese and tomatoes.
  4. Cover the skillet with a lid and allow it to cook for an additional 4-5 minutes over medium-low heat until the cheese is bubbly and lightly golden.
  5. Once the cheese is melted and the veggies are tender, remove the skillet from heat. Serve your Cheesy Zucchini Sauté immediately.
