Step-by-Step Instructions for Cheesy Zucchini Sauté
- In a large skillet, melt ¼ cup of cubed butter over medium heat. Once the butter is bubbling and fragrant, add ½ cup of chopped onion. Sauté the onion for 2-3 minutes until it becomes soft and translucent, stirring occasionally.
- Stir in 3 cups of coarsely shredded zucchini along with ½ teaspoon of salt, ¹/₈ teaspoon garlic powder, and minced fresh basil (or ½ teaspoon dried basil). Continue to cook, stirring frequently, for 4-5 minutes until the zucchini is crisp-tender and just starting to wilt.
- Sprinkle 1 cup of shredded cheddar cheese over the sautéed zucchini mixture, followed by 1 cup of diced fresh tomatoes and 2 tablespoons of sliced olives. Gently fold the ingredients together to evenly distribute the cheese and tomatoes.
- Cover the skillet with a lid and allow it to cook for an additional 4-5 minutes over medium-low heat until the cheese is bubbly and lightly golden.
- Once the cheese is melted and the veggies are tender, remove the skillet from heat. Serve your Cheesy Zucchini Sauté immediately.
