- Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
- In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes, then drain excess fat.
- Add the chopped yellow onion and green bell pepper, sautéing for 4-5 minutes until tender.
- Stir in diced tomatoes, tomato sauce, corn, green chilies, and seasonings, letting it simmer for 5-7 minutes.
- Spread the beef and vegetable mixture evenly in the prepared casserole dish.
- Mix biscuit mix and milk in a separate bowl until combined, then fold in half the shredded cheddar cheese.
