Step-by-Step Instructions
  1. Begin by seasoning your bone-in, skin-on chicken thighs with allspice, salt, pepper, minced garlic, and fresh thyme in a large bowl. Cover and let marinate for at least 30 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Sear chicken thighs skin-side down for about 4-5 minutes, until golden brown. Remove and set aside.
  3. In the same skillet, add chopped onions, minced garlic, and diced pepper. Sauté for about 3-4 minutes until soft and fragrant.
  4. Stir in long-grain rice, then add chicken broth and bring to a simmer. Nestle seared chicken back into the skillet, cover and simmer on low for about 20 minutes.
  5. Check rice for doneness, fluff with a fork, and squeeze lime juice over the dish. Serve warm with herbs or extra lime wedges.
