- Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté for about 5 minutes until softened.
- Reduce heat to low and continue cooking onions for 20-25 minutes, stirring occasionally, until caramelized.
- While onions are caramelizing, bring a pot of salted water to a boil. Cook gluten-free pasta according to package instructions.
- Once onions are caramelized, increase heat to medium. Add drained pasta to the skillet and mix well.
- Season with salt, pepper, and fresh herbs. Serve warm, drizzled with olive oil.
