Ingredients
  

For the Pasta
  • 8 oz Pasta gluten-free pasta for a gluten-free version
For the Veggies
  • 1 medium Zucchini or summer squash or roasted broccoli
  • 1 medium Onion red onion can be substituted with shallots or yellow onion
  • 1 cup Artichoke Hearts use marinated artichoke hearts or sun-dried tomatoes
  • 2 handful Spinach can be replaced with arugula
For the Dressing
  • 1 cup Plain Plant-Based Yogurt Forager Project or Silk’s Soy yogurt recommended
  • 1 juice of Lemon fresh lemon juice
  • 1 tbsp Miso Paste or nutritional yeast (2 tablespoons)
  • 1 cup Fresh Basil mix in parsley for added depth
  • 1 clove Garlic adjust to taste
  • 1/4 cup Pepitas replaceable with sunflower seeds or sesame seeds

Method
 

Step‑by‑Step Instructions for Lemon Basil Pasta Salad
  1. Sprinkle zucchini with salt and let sit for 5–10 minutes to draw out moisture. Pat dry with paper towel.
  2. Bring salted water to a boil. Cook pasta until al dente, about 8–10 minutes. Drain, rinse under cold water, and combine with spinach and artichoke hearts in a mixing bowl.
  3. Heat oil in a skillet. Sauté diced onions for about 3–5 minutes until soft. Transfer to the mixing bowl.
  4. In the same skillet, add zucchini cut side down. Caramelize for 3–6 minutes until golden brown. Slice and add to the mixing bowl.
  5. Blend fresh basil, parsley, lemon zest, garlic, pepitas, yogurt, miso, remaining olive oil, and lemon juice until smooth.
  6. Pour dressing over pasta mixture, toss gently to combine. Adjust seasoning and add more dressing as desired.
