Ingredients
  

For the Crust
  • 4 cups Tortilla Chips Crushed into fine crumbs
  • 4 tablespoons Butter Melted; can substitute with margarine or olive oil
For the Filling
  • 2 tablespoons Grapeseed Oil Can substitute with any neutral oil
  • 1 medium Yellow Onion Diced; swap for shallots or green onions if desired
  • 1 medium Red Bell Pepper Diced
  • 1 medium Green Bell Pepper Diced; can substitute with zucchini
  • 1 pound Lean Ground Beef Can substitute with ground turkey
  • 1 teaspoon Garlic Salt Or fresh minced garlic
  • 1 cup Medium-Hot Salsa Could use fresh salsa
  • 1 cup Black Olives Can omit or substitute with green olives
For Topping
  • 1 cup Cheddar Cheese Shredded; sharp cheddar recommended
  • 1 cup Pepper Jack Cheese Shredded; can use Monterey Jack for a milder flavor
  • 1/4 cup Green Onions Chopped, for garnish
  • 1/4 cup Cilantro Chopped, for garnish

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C). Set timer for 10 minutes.
  2. Blend or crush tortilla chips into fine crumbs. Melt 4 tablespoons of butter and mix it with the crushed chips. Press into the bottom of a 13x9" baking dish to form a crust. Bake for 8-10 minutes until golden brown.
  3. Heat 2 tablespoons of grapeseed oil in a skillet over medium heat. Add diced onion and bell peppers, sauté for 5-7 minutes until tender.
  4. Add 1 pound of ground beef to the skillet. Sprinkle with 1 teaspoon of garlic salt and cook until browned, about 8-10 minutes.
  5. Mix the cooked beef with 1 cup of salsa, 1 cup of cheddar cheese, half of the pepper jack cheese, and black olives.
  6. Spread the filling over the baked crust, top with remaining pepper jack cheese.
  7. Bake for 30 minutes or until the cheese is bubbly and golden.
  8. Let the casserole cool for 5-10 minutes, then garnish with green onions and cilantro before serving.
