Preparation Steps
- Preheat the oven to 375°F (190°C). Set timer for 10 minutes.
- Blend or crush tortilla chips into fine crumbs. Melt 4 tablespoons of butter and mix it with the crushed chips. Press into the bottom of a 13x9" baking dish to form a crust. Bake for 8-10 minutes until golden brown.
- Heat 2 tablespoons of grapeseed oil in a skillet over medium heat. Add diced onion and bell peppers, sauté for 5-7 minutes until tender.
- Add 1 pound of ground beef to the skillet. Sprinkle with 1 teaspoon of garlic salt and cook until browned, about 8-10 minutes.
- Mix the cooked beef with 1 cup of salsa, 1 cup of cheddar cheese, half of the pepper jack cheese, and black olives.
- Spread the filling over the baked crust, top with remaining pepper jack cheese.
- Bake for 30 minutes or until the cheese is bubbly and golden.
- Let the casserole cool for 5-10 minutes, then garnish with green onions and cilantro before serving.
