- In a large mixing bowl, combine tahini, red wine vinegar, fresh lemon juice, minced garlic, and za'atar spice mix. Whisk in water if tahini is too thick.
- Add chicken thighs to the marinade, ensuring they are fully coated. Set aside a portion of the marinade, cover the bowl, and let marinate for at least 1 hour.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and let the marinated chicken come to room temperature.
- Arrange the marinated chicken thighs on the lined baking sheet. Bake for 30 to 35 minutes until golden brown and internal temperature reaches 165°F (74°C).
- Remove from oven, let rest for a few minutes, and drizzle reserved tahini sauce over the chicken. Garnish with fresh parsley.
