  • 2 tablespoons Za'atar Spice Mix Blend of thyme, sesame seeds, and sumac
  • 2 tablespoons Red Wine Vinegar Can substitute with more lemon juice
  • 1 tablespoon Fresh Lemon Juice Adds brightness
  • 3 cloves Garlic Minced for aromatic depth
For Garnishing
  • 1/4 cup Fresh Parsley Can swap for cilantro

Method
 

Preparation
  1. In a large mixing bowl, combine tahini, red wine vinegar, fresh lemon juice, minced garlic, and za'atar spice mix. Whisk in water if tahini is too thick.
  2. Add chicken thighs to the marinade, ensuring they are fully coated. Set aside a portion of the marinade, cover the bowl, and let marinate for at least 1 hour.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and let the marinated chicken come to room temperature.
  4. Arrange the marinated chicken thighs on the lined baking sheet. Bake for 30 to 35 minutes until golden brown and internal temperature reaches 165°F (74°C).
  5. Remove from oven, let rest for a few minutes, and drizzle reserved tahini sauce over the chicken. Garnish with fresh parsley.
