For the Meatballs
  • 1 cup Green Lentils Cooked until tender
  • 0.5 cup Breadcrumbs Gluten-free if necessary
  • 1 medium Onion Minced
  • 2 cloves Garlic Minced
  • 0.25 cup Parsley Fresh, chopped
  • 0.25 cup Dill Fresh, chopped
  • 1 tsp Oregano
  • 1 tsp Cumin Optional
  • 1 large Egg or flax egg for vegan
  • 2 tbsp Olive Oil
For the Tzatziki
  • 1 cup Greek Yogurt or dairy-free yogurt
  • 0.5 cup Cucumber Grated and squeezed dry
  • 1 tbsp Lemon Juice
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a bowl, mash the cooked lentils, then mix with breadcrumbs, onion, garlic, parsley, dill, oregano, cumin, salt, pepper, olive oil, and egg until combined.
  3. Shape the mixture into small balls, about 1 to 1.5 inches in diameter, and place on the baking sheet.
  4. Bake for 20-25 minutes, turning halfway through for even browning.
  5. While the meatballs bake, combine yogurt, cucumber, garlic, lemon juice, olive oil, salt, and pepper to make tzatziki. Chill for at least 20 minutes.
  6. Serve the meatballs with tzatziki, garnished with lemon wedges and cucumber slices.
