Preparation
- Preheat the oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- In a bowl, mash the cooked lentils, then mix with breadcrumbs, onion, garlic, parsley, dill, oregano, cumin, salt, pepper, olive oil, and egg until combined.
- Shape the mixture into small balls, about 1 to 1.5 inches in diameter, and place on the baking sheet.
- Bake for 20-25 minutes, turning halfway through for even browning.
- While the meatballs bake, combine yogurt, cucumber, garlic, lemon juice, olive oil, salt, and pepper to make tzatziki. Chill for at least 20 minutes.
- Serve the meatballs with tzatziki, garnished with lemon wedges and cucumber slices.
