  • 2 pieces Bay Leaves Remove before serving.
For Optional Vegetables
  • 2 cups Carrots
  • 2 cups Potatoes
  • 2 cups Parsnips

Equipment

  • Dutch oven

Method

Step-by-Step Instructions
  1. Heat olive oil in Dutch oven over medium-high heat and sear beef roast on all sides until golden brown (approximately 4-5 minutes per side).
  2. Sauté sliced onions until they soften and caramelize (about 5-7 minutes). Add minced garlic and cook for another 1-2 minutes.
  3. Deglaze the pot with apple cider, scraping up browned bits, and simmer for a minute.
  4. Stir in beef broth, apple cider vinegar, and Dijon mustard. Add herbs, and bring to a gentle simmer.
  5. Return seared beef to pot, ensuring it is partially submerged in the braising liquid.
  6. Cover and transfer to a preheated oven set to 325°F (165°C). Braise for 3 hours, adding vegetables after 2 hours if desired.
  7. Check roast for tenderness; it should pull apart easily. If needed, braise for an additional 30-60 minutes.
  8. Let the roast rest for 10-15 minutes before slicing to redistribute juices.
  9. Serve with braising liquid and your choice of sides, such as mashed potatoes, rice, or crusty bread.
