Roasting and Cooking
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, then chop them into bite-sized pieces. Toss with olive oil, salt, and pepper.
- In a bowl, mix honey, balsamic vinegar, minced garlic, Dijon mustard, salt, and pepper. Coat the chicken thighs with half the marinade.
- Place chicken thighs and carrots on baking sheet. Roast for 25-30 minutes or until chicken is done and carrots are tender.
- Boil potatoes for about 15 minutes until fork-tender. Mash with goat cheese and warm milk.
- Remove from oven, drizzle remaining marinade on chicken, and serve with potatoes and carrots.
