For the Honey Balsamic Chicken
  • 4 pieces Chicken Thighs
  • 1/4 cup Honey
  • 1/4 cup Balsamic Vinegar
  • 2 cloves Garlic Minced
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Goat Cheese Mashed Potatoes
  • 2 cups Potatoes Peeled and chopped
  • 1/2 cup Goat Cheese For creamy texture
  • 1 cup Milk Warm for fluffy texture

Method
 

Roasting and Cooking
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, then chop them into bite-sized pieces. Toss with olive oil, salt, and pepper.
  3. In a bowl, mix honey, balsamic vinegar, minced garlic, Dijon mustard, salt, and pepper. Coat the chicken thighs with half the marinade.
  4. Place chicken thighs and carrots on baking sheet. Roast for 25-30 minutes or until chicken is done and carrots are tender.
  5. Boil potatoes for about 15 minutes until fork-tender. Mash with goat cheese and warm milk.
  6. Remove from oven, drizzle remaining marinade on chicken, and serve with potatoes and carrots.
