Preparation Steps
  1. Season the duck legs generously with salt, pepper, and herbs like rosemary or thyme, and refrigerate for about 3 hours.
  2. In a saucepan, combine fresh orange juice and sugar over medium heat, stirring occasionally until thickened (10–15 minutes).
  3. Preheat your air fryer to 375°F (190°C) and arrange the duck legs skin-side down. Cook for approximately 1 hour and 15 minutes.
  4. Peel and chop celeriac into cubes, boil in salted water for 15–20 minutes until tender, then mash with butter, salt, and pepper.
  5. Heat olive oil in a pan and sauté choice of greens for 3–5 minutes until wilted.
  6. Plate the duck legs, drizzle with citrus glaze, and serve with celeriac mash and sautéed greens.
