Ingredients:

• 1 pound fresh spinach, chopped
• 1/2 cup chopped fresh dill
• 1/2 cup chopped fresh parsley
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 8 ounces feta cheese, crumbled
• 4 eggs, lightly beaten
• Salt and pepper to taste
• 1/4 cup olive oil
• 1 package phyllo pastry sheets, thawed

Directions:

. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
. Stir in chopped spinach and cook until wilted. Remove from heat and let it cool slightly.
. In a mixing bowl, combine the cooked spinach mixture, chopped dill, chopped parsley, crumbled feta cheese, beaten eggs, salt, and pepper. Mix well.
. Lay one sheet of phyllo pastry on the greased baking dish. Brush lightly with olive oil. Repeat with several more sheets, brushing each with olive oil.
. Spread the spinach and feta mixture evenly over the phyllo pastry.
. Layer the remaining phyllo pastry sheets over the spinach mixture, brushing each with olive oil.
. Using a sharp knife, score the top layer of phyllo into squares or triangles.
. Bake in the preheated oven for 40-45 minutes or until golden brown and crispy.
. Allow the Spanakopita to cool slightly before slicing and serving. Enjoy the taste of Greece right at home
