Chocolate Mint Icebox Layer Cake

Ingredients:

• 2 cups chocolate wafer cookie crumbs
• 1/2 cup unsalted butter, melted
• 2 cups heavy cream
• 1 cup powdered sugar
• 1 teaspoon peppermint extract
• 1/2 teaspoon vanilla extract
• Green food coloring (optional)
• 1 1/2 cups semi-sweet chocolate chips
• 1/4 cup whole milk
• 1/4 cup mini chocolate chips (for garnish)
• Fresh mint leaves (for garnish)

Directions:

. In a bowl, combine chocolate wafer cookie crumbs and melted butter. Press this mixture into the bottom of a springform pan to form the crust. Place it in the freezer while you prepare the filling.
. In a separate bowl, whip the heavy cream, powdered sugar, peppermint extract, and vanilla extract until stiff peaks form. Add a few drops of green food coloring if desired.
. Spread half of the whipped cream mixture over the crust in the pan.
. In a microwave-safe bowl, melt the semi-sweet chocolate chips and milk in 20-second intervals, stirring until smooth. Allow it to cool slightly.
. Pour the melted chocolate over the first layer of whipped cream.
. Add the remaining whipped cream mixture on top of the chocolate layer.
. Sprinkle mini chocolate chips and garnish with fresh mint leaves.
. Cover the pan with plastic wrap and refrigerate for at least 4 hours or until the cake is set.
