Ingredients:
• 1 sheet puff pastry
• 2 cups heavy cream
• 1/2 cup powdered sugar
• 2 teaspoons vanilla extract
• 1 packet gelatin
• 1/4 cup cold water
• 1/2 cup milk
• 2 egg yolks
• 2 tablespoons cornstarch
• Confectioners’ sugar for dusting
Directions:
. Start by preheating your oven to 400°F (200°C). Roll out the puff pastry sheet onto a baking tray lined with parchment paper and prick it all over with a fork. Bake until golden brown, usually about 15-20 minutes. Let it cool completely.
. In a small bowl, sprinkle the gelatin over cold water to bloom it.
. In a saucepan, heat the milk until it’s just about to simmer. In a separate bowl, whisk together the egg yolks, cornstarch, and 1/4 cup of powdered sugar until smooth. Gradually whisk the hot milk into this mixture.
. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens. Remove from heat, add the bloomed gelatin, and stir until dissolved. Allow the custard to cool.
. Whip the heavy cream, remaining powdered sugar, and vanilla extract until stiff peaks form. Gently fold the whipped cream into the custard mixture.
. Cut the cooled puff pastry sheet in half horizontally. Place one half in the bottom of a dish. Spread the cream mixture evenly over it. Top with the other half of the puff pastry.
. Refrigerate for at least 3 hours or until set.
. Dust with confectioners’ sugar just before serving.
Now, it’s time to indulge in this heavenly Cremeschnitte!
