Vanilla Cake with Crushed Mint Candy

• 2 cups all-purpose flour
• 1 cup granulated sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1 cup milk
• 2 teaspoons vanilla extract
• 3 large eggs

For the whipped cream frosting:

• 2 cups heavy cream
• 1/2 cup powdered sugar
• 1 teaspoon vanilla extract

For topping and sides:

• Crushed mint candy


. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
. In a large mixing bowl, combine flour, sugar, baking powder, and salt.
. Add softened butter and mix until crumbly.
. In a separate bowl, whisk together milk, vanilla extract, and eggs.
. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
. Divide the batter evenly between the prepared cake pans and smooth the tops.
. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
For the whipped cream frosting:
. In a chilled mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
To assemble:
. Once the cakes are completely cooled, place one layer on a serving plate.
. Spread a generous amount of whipped cream frosting over the top.
. Place the second layer on top and frost the top and sides with the remaining whipped cream.
. Sprinkle crushed mint candy over the top and around the sides for decoration.
. Serve and enjoy!
