Pistachio and White Chocolate Cheesecake

• 200g digestive biscuits
• 100g unsalted butter, melted
• 200g white chocolate, melted
• 500g cream cheese
• 100g powdered sugar
• 200ml double cream
• 100g pistachios, chopped
• 1 tsp vanilla extract


. Crush the digestive biscuits until fine. Mix with melted butter and press into the base of a springform cake tin. Chill in the fridge.
. In a bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well.
. In a separate bowl, whip the double cream until soft peaks form. Gently fold into the cream cheese mixture.
. Stir in the melted white chocolate and chopped pistachios until well combined.
