Peppermint Bark Cheesecake

Ingredients:

• 2 cups crushed chocolate cookies
• 1/4 cup melted butter
• 3 packages (24 oz) cream cheese, softened
• 1 cup granulated sugar
• 3 large eggs
• 1 teaspoon vanilla extract
• 1 cup crushed peppermint candies
• 1 cup semisweet chocolate chips
• 1 cup heavy cream

Directions:

. Preheat your oven to 325°F (160°C). Mix the crushed cookies and melted butter, then press into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
. In a large bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
. Pour half of the cheesecake batter over the crust. Sprinkle half of the crushed peppermint candies and half of the chocolate chips over the batter. Repeat layers with remaining batter, peppermint candies, and chocolate chips.
. Bake for 45-50 minutes or until the center is almost set. Turn off the oven and let the cheesecake cool inside with the door closed for 1 hour.
. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.
. Before serving, whip the heavy cream until stiff peaks form. Spread over the cheesecake and sprinkle with more crushed peppermint candies and chocolate.
