Oatmeal Raisin Cookies

  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup raisins

Instructions:

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a separate large bowl, beat the softened butter with both granulated and brown sugars until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually mix in the dry ingredients until combined.
  6. Stir in the rolled oats and raisins.
  7. Roll the cookie dough into balls, about 1 tablespoon each, and place them onto the prepared baking sheet, leaving about 2 inches between each cookie.
