Ingredients:

• 2 cups graham cracker crumbs
• ½ cup melted butter
• 2 cups mango puree
• ½ cup sugar
• 16 oz cream cheese, softened
• 1 cup heavy cream
• 2 cups mango puree
• 1/2 cup sugar
• 1/4 cup water
• 3 tablespoons gelatin powder

Directions:

. In a bowl, mix graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan and refrigerate.
. In another bowl, beat cream cheese, sugar, and mango puree until smooth.
. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
. Spread the mango cheesecake mixture over the chilled crust and refrigerate for at least 4 hours or until set.
. In a saucepan, combine mango puree, sugar, and water. Heat over medium heat until sugar dissolves, stirring occasionally.
. Once sugar is dissolved, sprinkle gelatin powder over the mixture. Stir continuously until gelatin is completely dissolved and mixture is smooth.
. Remove from heat and let it cool slightly.
. Carefully pour the mango jello mixture over the set cheesecake layer.
. Refrigerate again until the jello layer is set.
. Top it with sliced Mango.
. Once set, slice and serve your delicious No Bake Mango Cheesecake!
