Ingredients

• 1 1/2 cups heavy cream

• 1/2 cup powdered sugar

• 8 ounces mascarpone cheese

• 1 teaspoon vanilla extract

• Zest of 1 lemon

• 1/4 cup lemon juice

• 24 ladyfingers

• 1 cup fresh raspberries

• Lemon slices, for garnish

• Fresh mint leaves, for garnish


Instructions

1 In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.

2 In a separate bowl, combine the mascarpone cheese, vanilla extract, lemon zest, and lemon juice until smooth.

3 Gently fold the whipped cream into the mascarpone mixture until well combined.

4 Arrange half of the ladyfingers in a single layer at the bottom of a serving dish.

5 Spread half of the mascarpone mixture over the ladyfingers.

6 Scatter half of the fresh raspberries on top.

7 Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.

8 Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

9 Just before serving, garnish with lemon slices and fresh mint leaves for an extra touch of freshness and vibrancy.
