Ingredients:
• 2 cups grated carrots
• 4 large eggs
• 1 cup granulated sugar
• 1 cup all-purpose flour
• 1 tsp baking powder
• 1 tsp ground cinnamon
• 1/2 tsp ground nutmeg
• 1/2 tsp salt
• 1 tsp vanilla extract
• 1/2 cup chopped walnuts
• Powdered sugar for dusting
For the Cream Cheese Filling:
• 8 oz cream cheese, softened
• 1/4 cup unsalted butter, softened
• 1 cup powdered sugar
• 1 tsp vanilla extract
Directions:
. Preheat your oven to 350°F (175°C) and grease a 10×15-inch jelly roll pan. Line it with parchment paper and grease the paper as well.
. In a mixing bowl, whisk together the eggs and granulated sugar until well combined. Add in the grated carrots and mix.
. In another bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the carrot mixture, stirring until well combined. Finally, stir in the vanilla extract and chopped walnuts.
. Pour the batter into the prepared jelly roll pan and spread it evenly. Bake for 15-20 minutes, or until the cake is set and springs back when touched.
. While the cake is baking, prepare the cream cheese filling. In a mixing bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
. Once the cake is done baking, immediately turn it out onto a clean kitchen towel that’s been dusted with powdered sugar. Carefully remove the parchment paper and roll the cake and towel together from the short end. Let it cool completely in this rolled-up form.
. Gently unroll the cooled cake, spread the cream cheese filling evenly, and roll it back up without the towel. Wrap it in plastic wrap and refrigerate for at least an hour to set.
. Before serving, dust the Carrot Roll Cake with powdered sugar. Slice and enjoy!
