Coconut Key Lime Crinkle Cookies

Ingredients:

• 1 cup shredded coconut
• 2 cups all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 2 large eggs
• Zest of 2 key limes
• 2 tablespoons key lime juice
• 1/2 cup powdered sugar, for rolling

Directions:

. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
. In a bowl, combine flour, baking powder, and salt. Set aside.
. In another bowl, cream together butter and granulated sugar until light and fluffy.
. Beat in eggs, one at a time, followed by key lime zest and juice.
. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
. Chill the cookie dough in the refrigerator for at least 1 hour.
. Shape the dough into small balls and roll each ball in powdered sugar until coated.
. Place the coated balls on the prepared baking sheets, leaving space between each.
. Bake for 10-12 minutes or until the edges are set and the centers are slightly soft.
. Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack.
