Ingredients:
- 2 lbs. beef chuck roast, cut into 1-inch pieces ????
- 1/4 cup all-purpose ???? flour
- 1 teaspoon ???? salt
- 1/2 teaspoon black pepper
- 3 tablespoons ???? olive oil
- 1 large ???? onion, chopped
- 4 garlic cloves, minced
- 4 cups beef broth
- 2 cups chopped ???? tomatoes
- 2 cups chopped carrots ????
- 2 cups chopped potatoes ????
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
Instructions:
- In a large mixing bowl, combine the flour, salt, and black pepper.
- Toss the beef pieces in the flour mixture until coated.
- In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
- Brown the beef pieces on all sides, working in batches as needed.
- Remove the beef from the pot and set it aside.
- In the same pot, sauté the onion and garlic until the onion is soft and translucent.
- Add the beef broth, chopped tomatoes, carrots, potatoes, thyme, rosemary, and bay leaf to the pot.
- Return the beef to the pot and stir to combine.
- Bring the stew to a simmer and then reduce the heat to low.
- Cover the pot and simmer for 2-3 hours, or until the beef is tender and the vegetables are cooked through.
- Remove the bay leaf before serving.
