Browned Beef Stew

Ingredients:

  • 2 lbs. beef chuck roast, cut into 1-inch pieces ????

  • 1 bay leaf

Instructions:

  1. In a large mixing bowl, combine the flour, salt, and black pepper.
  2. Toss the beef pieces in the flour mixture until coated.
  3. In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
  4. Brown the beef pieces on all sides, working in batches as needed.
  5. Remove the beef from the pot and set it aside.
  6. In the same pot, sauté the onion and garlic until the onion is soft and translucent.
  7. Add the beef broth, chopped tomatoes, carrots, potatoes, thyme, rosemary, and bay leaf to the pot.
  8. Return the beef to the pot and stir to combine.
  9. Bring the stew to a simmer and then reduce the heat to low.
  10. Cover the pot and simmer for 2-3 hours, or until the beef is tender and the vegetables are cooked through.
  11. Remove the bay leaf before serving.
