Blackberry Lemon Roll Cake

• 1 cup all-purpose flour

• 1/2 tsp salt
• 4 large eggs

• 1 tsp lemon zest
• 1 tsp vanilla extract
• 1/4 cup powdered sugar (for dusting)
• 1 cup fresh blackberries
• 1 cup heavy cream

Directions:

. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
. In a mixing bowl, whisk together the flour, baking powder, and salt.
. In another bowl, beat the eggs and granulated sugar until light and fluffy.
. Add lemon juice, lemon zest, and vanilla extract to the egg mixture and mix well.
. Gently fold in the dry ingredients until just combined.
. Pour the batter onto the prepared pan and spread it evenly.
. Bake for 10-12 minutes, or until the cake is lightly golden and springs back when touched.
. While the cake is still warm, dust it with powdered sugar, place a clean kitchen towel on top, and flip the cake onto the towel.
. Carefully remove the parchment paper, then roll the cake along with the towel. Let it cool completely.

. Roll the cake again, this time without the towel.
